Traditional Pearl Millet Vegetable Upma Recipe

Ingredients

  • 1 cup Rigel Spices Pearl Millet

  • 2½–3 cups water, adjusted as needed

  • 2 tbsp ghee or cooking oil

  • 1 tsp mustard seeds

  • 1 tsp urad dal

  • 1 tsp chana dal

  • 1 onion (finely chopped)

  • 1 green chilli (finely chopped)

  • 1 tsp ginger (grated)

  • ½ cup carrots (finely chopped)

  • ¼ cup green peas

  • ¼ cup beans (chopped)

  • A few curry leaves

  • Salt to taste

  • Fresh coriander leaves for garnish

  • 1 tbsp lemon juice (optional)

Preparation Method

Step 1 – Prepare the Pearl Millet

If using whole pearl millet grains, wash them thoroughly and soak for 6–8 hours or overnight. Drain the water before cooking. For quicker preparation, use pearl millet grits or a suitable coarsely ground millet product.

Step 2 – Prepare the Tempering

Heat ghee or cooking oil in a heavy-bottomed pan. Add mustard seeds and allow them to splutter. Add urad dal, chana dal, curry leaves, green chilli, and grated ginger. Sauté until fragrant.

Step 3 – Cook the Vegetables

Add the chopped onions and sauté until they turn soft. Add carrots, green peas, and beans. Cook for 3–4 minutes, stirring occasionally.

Step 4 – Cook the Pearl Millet

Add the prepared Pearl Millet and mix well with the vegetables. Pour in the water and add salt to taste. Cover and cook over low heat until the millet becomes tender and absorbs the water. Add a little extra hot water if needed, as cooking time varies depending on the grain and preparation.

Step 5 – Garnish and Serve

Switch off the heat and allow the upma to rest for a few minutes. Garnish with fresh coriander leaves and add lemon juice if desired. Serve hot with coconut chutney, sambar, or a bowl of fresh curd.
