Traditional Karuppu Kavuni Rice Pongal Recipe
Ingredients

1 cup Rigel Spices Karuppu Kavuni Rice

½ cup moong dal
-
4–5 cups water
-
½ cup milk (optional)

1 tsp cumin seeds

1 tsp black pepper

1–2 tbsp ghee

1 inch ginger (finely chopped)

8–10 cashews

A few curry leaves

A pinch of asafoetida

Preparation Method
Step 1 – Soak the Rice
Wash the Karuppu Kavuni Rice thoroughly and soak it for 6–8 hours or overnight. Soaking helps soften the traditional rice and makes it easier to cook.
Step 2 – Roast the Moong Dal
Lightly roast the moong dal in a pan until it gives off a pleasant aroma. Avoid over-roasting. Keep it aside.
Step 3 – Cook the Rice & Dal
Add the soaked Karuppu Kavuni Rice and roasted moong dal to a pressure cooker along with water. Cook until both the rice and dal become soft and creamy.

Step 4 – Prepare the Pongal Tempering
