Traditional Palakkadan Matta Rice Vegetable Rice Recipe

Ingredients

  • 1 cup Rigel Spices Palakkadan Matta Rice
  • 3 cups water
  • 1 onion, sliced
  • 1 carrot, diced
  • ½ cup green peas
  • 1 capsicum, chopped
  • 2 green chillies, slit
  • 1 tsp ginger-garlic paste
  • 2 tbsp cooking oil or coconut oil
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • 8–10 curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Cashews, optional

Preparation Method

Step 1 – Wash & Soak the Rice

Wash the Palakkadan Matta Rice thoroughly and soak it for 6–8 hours or overnight. The grains are naturally firm, so soaking helps improve cooking and texture.

Step 2 – Cook the Rice

Drain the soaked rice and add it to a pressure cooker or heavy-bottomed pot with water. Cook until the rice becomes tender while retaining its characteristic texture. Allow the cooked rice to cool slightly.

Step 4 – Mix the Rice
